It has been nearly a decade since global bioscience leader Chr. Hansen launched its first generation of FreshQ®, which is a range of food cultures that improves the bioprotective effects of fermentation in dairy. In this process, the cultures and fermentation help keep food fresh by outcompeting yeast and mold spoilage for the space and nutrients they require to grow. “We utilize traditional fermentation principles to help improve quality and shelf life and reduce waste,” says Peter Thoeysen, Chr. Nature’s own resources to reduce food waste
At Chr. Hansen, we are proud to use nature’s own resources to reduce food waste. By optimizing the quality and shelf life of dairy products such as cheese and yogurt, we contribute to a more sustainable and efficient food system for future generations. Over the past year, our customers have used our food cultures to reduce yogurt waste by 160,000 tons, and our goal is to prevent 2 million tons of yogurt waste by 2025.
The newest generation of FreshQ® cultures enables the industry to level up
This year Chr. Hansen launched the next generation of FreshQ® cultures that were named the world’s Best Dairy Ingredient by 2021 World Dairy Innovation Awards. The cultures are specifically developed to unlock the benefits of bioprotection for producers who may experience challenged cold chains, long fermentation and in-process holding times. The special food cultures can be applied to a broad range of fermented dairy products, such as yogurt, white cheese and tvorog.
